Please note that many of the products we sell are variable in weight and your card will be temporarily authorized for an amount that is higher than your cart total above (just like at the gas pump).

Once we select the product(s) that will be shipped, your credit card will only be charged for the correct weight of the items picked.

All prices listed for bulk beef, pork and lamb packages are based on hang weight. From Hang weight there is some loss (35-40%) due to trimming and aging (bones, etc). The hang weight listed on the invoice is a higher weight than the weight of the meat that will be in your package that you take home. If you have ordered a bulk package you have the opportunity to take home the bones and organs that come with your package.
